Apple and Quince Bunt Cake

For 8

1 cup of olive oil or butter
5 eggs
1 ½ cups sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ tablespoon cinnamon
½ tablespoon cloves
3 cups flour
6 pink lady apples, peeled and diced
1 quince or granny smith apple peeled and diced
Powdered sugar


Preheat oven to 350 degrees and grease a bunt cake pan.  In a mixing bowl,
beat together olive oil, eggs and sugar.  In a separate bowl, mix together
flour, baking soda, baking powder, cinnamon and cloves.  Stir dry
ingredients into the olive oil, egg, sugar mixture.  Fold in diced apples and
quince.  Pour batter into the bunt cake pan and bake for 1 ½ hours or until a
knife or toothpick comes out clean. Allow to cool completely and dust with
dust with powdered sugar.
