Broccoli Soup

For 4


1 ½ pounds broccoli
7 cups of water or chicken broth
Salt and pepper to taste
Olive oil


Destem broccoli and slice the stalks.  Place in pot with water or broth and
bring to a boil.  Reduce heat to low and simmer for about 30 minutes.  
Season with salt and pepper.  Transfer to a blender.  Drizzle with a touch
olive oil and blend until smooth and creamy.
