Corn with French Beans and Cherry Tomatoes

For 8

8 ear or corn, white or yellow
8 medium handfuls of French beans
1 pint cherry tomatoes cut in half
Salt and pepper
Extra virgin olive oil


Bring a medium pot of salty water to a boil.  Trim the end off of the French beans.
Place beans in boiling water for 15-30 seconds.  Drain beans, place on a platter and
drizzle with olive oil as they cool.   Cut corn off cob.  Place a sauté pan on the
stove top and add a tablespoon of olive oil.  Heat to medium high and add corn.  
Sauté corn for a fast minute and season with salt and pepper.  Season halved
cherry tomatoes with salt and pepper and drizzle with a touch of olive oil.  
Arrange green beans, tomatoes and corn on a platter and serve. Torn basil would
be a nice garnish for this dish.
