Creamed Broccoli Rabe
For 5
2 bunches broccoli rabe, bottom steams removed
2 cups cream
Salt and Pepper
Parmiggiano-Reggiano or pecorino (optional)
Bring a pot of salty water to a boil. Add broccoli rabe and cook for a few
minutes. This will take some of the bitterness out of the greens. Drain and
allow to cool just a bit. Squeeze excess water from the broccoli rabe and rough
chop. Place in a pan and add cream. Cook on stove top at medium high heat
until cream comes to a boil. Reduce heat to low and continue cooking, stirring
occasionally, for about 20-30 minutes. Taste then season with salt and pepper.
Garnish with shaved parmiggiano or pecorino cheese.
