Roasted Delicata Squash Two Ways

2 delicata squash, halved and seeded
Olive oil
Salt and Pepper
4 sage leafs
Preheat oven to 350. Place delicate squash cut side up on a sheet pan. Drizzle
with olive oil and rub into squash cavity with your fingers. Season with salt
and pepper. Place one leaf of sage inside the squash. Roast in oven for 45
minutes or until cooked through.
Another Method
Preheat oven to 350. Peel delicate squash, cut in half and spoon out seeds.
Place each half face side down on a cutting board and cut in half lengthwise,
then cut horizontally into slices about ½” to 1” thick. Transfer to a sheet pan
and toss with olive oil. Season with salt and pepper. Roast in oven for 25
minutes or until tender. Remove from oven and garnish with fresh chopped
sage.
