Figs in Balsamic

I tend to use this recipe for figs that are a bit under
ripe and look a little thirsty. The very best figs of
the basket I may pick out, cut in half and move to a
cheese platter to serve as they are. Over-ripe figs
can be put aside, chopped and added to the left
over balsamic sauce for a vinaigrette or used in a
fig chutney.
2 basket black mission figs
1/2 cup balsamic
Cut figs in half lengthwise keeping steams intact.
Place figs cut side down on a plate or platter. Pour
just enough balsamic over the figs to cover the
bottom of the platter. Allow to sit for at least 15
minutes. This will allow the favors to develop
between the figs and vinegar.
