Lisa's Grilled Peach Salad with Arugula Greens and Goat Cheese
For 6
8 medium handfuls of arugula
4 peaches, pitted and halved or quartered
½ pound goat cheese
¼ cup balsamic
¾ cup olive oil
Salt and pepper
Whisk olive oil into balsamic and season with salt and pepper to taste.
Meanwhile, drizzle peaches with olive oil and grill over medium high heat
until marked on both sides. Meanwhile, toss greens with balsamic
vinaigrette and place on a platter or individual plates. Garnish with goat
cheese and grilled peaches.
