My Ma’s Potato Salad
For 4
3-4 medium potatoes, peeled and medium diced
4 eggs
1 ½ teaspoons mustard
½ cup mayonnaise
1 teaspoon lemon juice
1 teaspoon of salt
½ teaspoon ground pepper
1 teaspoon sugar
1 stalk celery, fine diced or minced
1 tablespoon minced onion (yellow or sweet Vidalia)
Add the diced potatoes to a pot and gently place eggs on top of potatoes. Cover
with water and bring to a boil for 7 minutes. Drain potatoes and eggs and allow to
cool. Peel eggs and chop well. Mix mustard, mayonnaise, lemon juice, salt, pepper
and sugar together. Fold into potatoes along with the chopped eggs, celery and
onions.
