Roasted Garlic Bulbs with Good Bread

For 10

10 whole garlic bulbs
Olive oil
Salt and Peppers
Fresh Sage or Thyme (optional)


Preheat oven to 350 degrees.  Cut ¼ inch of the
top of each garlic bulb – root side being the
bottom.  Place garlic bulb on a baking sheet or
in gratin dish, root side down, brush with olive
oil, season with salt and pepper, and scatter
fresh herbs on top.  Cover loosely with foil and
bake for 45 minutes or until soft and
caramelized.  Once cool enough to handle.  
Squeeze the bulb from the bottom half until the
soft, paste-like cloves come out of the top.
Serve with good bread.
